Food allergy is an adverse immune response to specific food components, typically proteins. The diagnosis is based on clinical history and can be supported by testing, such as skin prick testing, allergen-specific IgE serology and oral food challenges (Gupta et al. 2008). However, there is no universal agreement on definition or criteria for diagnosis. In humans, the only life-saving treatment in case of anaphylaxis is allergen avoidance and epinephrine injection if an anaphylactic event occurs (Cianferoni & Muraro 2012).
