Introduzione
"Reazione avversa al cibo" o "ipersensibilità alimentare" sono termini generici che implicano una reazione fisiologica o un segno clinico causato da una risposta o reazione anormale nei confronti di una sostanza ingerita. Il segno può riflettere una risposta immunologica (allergia vera) o una reazione chimica o tossica (intolleranza) (Tabella 1). Nella maggior parte dei casi, il clinico non può differenziare l'eziologia e quindi il termine preferito è reazione avversa al cibo, nonostante l'uso comune dei termini allergia alimentare o ipersensibilità alimentare.
