La taurina es un aminoácido que contiene azufre (H2N – CH2 – CH2 – SO3H). Está presente en la mayoría de los tejidos animales pero ausente en los vegetales. El 75% de la taurina se encuentra en el músculo estriado, en forma libre en el interior de las células (Dillon, 1991).
Aspectos fisiológicos básicos
Al conjugarse con el ácido cólico, la taurina facilita la síntesis hepática de las sales biliares. Este es su papel mejor conocido pero la taurina también actúa como osmorregulador, influyendo en el flujo de calcio entre el interior y el exterior de la célula (Schaffer et Kramer, 1980). Este mecanismo explica el papel de la taurina en:
- la agregación plaquetaria
- excitabilidad neuronal
- funcionamiento del miocardio
(Freeman, 1998).
