    Composition des os

    L’os est une forme particulière de tissu conjonctif qui présente une composition chimique et physique complexe (Tableau 1). En dehors de la fraction cellulaire (10 %) et de la phase aqueuse (25 %), il est composé d’une matrice organique et d’une phase minérale. La fraction cellulaire comporte les ostéoblastes (cellules à l’origine de la matrice organique) et des ostéoclastes (cellules qui résorbent la matrice calcifiée). La matrice organique est constituée de 90 % de fibres de collagène à forte teneur en hydroxyproline et de 10 % d’aminopolysaccharides, de protéines non collagéniques, et d’une petite quantité de lipides. La phase minérale représente environ 65 % du volume de l’os, principalement sous forme de cristaux d’hydroxyapatite et phosphate de calcium amorphe. D’autres minéraux sont présents en faibles quantités. Quatre-vingt-dix-neuf pour cent du calcium et 80 % du phosphore de l’organisme sont fixés dans le squelette. […]
